Lovers Point- CHOCO DELIGHT

An interesting and tempting concoction of flavours and taste; the molten chocolate mass oozing out from within adds to the delicate texture of this dessert.

Ingredients:

  • Flour – 1 cup
  • Sugar – 3/4th cup
  • Cocoa powder, divided- 1⁄2 cup
  • Baking powder – 2 tsp
  • Salt – 1⁄4 tsp
  • Butter, melted, plus more for greasing the pan -1/4 cup
  • Milk – 2/3rd cup
  • Dark brown sugar – 1 cup
  • Hot water – one- and-a-half cup
  • Ice cream – Vanilla/ butterscotch, etc. for serving alongside
  • Fresh fruits – Strawberries/ assorted berries/ mint, etc. for garnish

Method

1. Pre-heat the oven to 170 degrees celsius, grease individual moulds with melted butter and dust them with a little refined flour. Keep them aside.
2. Sieve together all the dry ingredients using 1⁄4 cup cocoa powder and using a whisk/electric beater beat up together the butter and milk until smooth in texture. Place it into the greased moulds.
3. Now in a separate bowl, combine together the remaining 1⁄4 cup cocoa powder and brown sugar. Sprinkle this mixture on top in the moulds in a flat even manner and pour over hot water and place it in the oven for baking.
4. Time for baking will be around 30 minutes. While it bakes and takes its time during baking, the cake will start turning out to be shiny on the surface and bubbly on the sides. Remove carefully once baked and rest for 3-5 minutes and then serve it hot/warm with scoops of ice-cream, fruit sauces/ toppings/ fresh fruits, nuts, mint, etc. and enjoy the lava as the spoon digs into the plate!

Chicken Lovina- WONDERLUST

An amazing chicken breast recipe stuffed with caramelised onions, spinach and cheese; cooked to perfection, served with wonder lust sauce.

Ingredients

For the chicken breasts & marination

  • Boneless chicken breasts - 500 gm, bones removed, skin optional
  • Olive oil – 2 tbsp
  • Garlic paste – 1 tsp
  • Salt and crushed black pepper to taste
  • White wine – 2-3 tbsp
  • Mustard paste – 1 tsp
  • Mixed herbs – 1⁄2 tsp

For the stuffing:

  • Butter – 1 tsp
  • Garlic – 1 tsp, chopped
  • Onion – 2 tbsp, chopped
  • Blanched chopped spinach – 1 cup
  • Salt and pepper to taste
  • Grated cheese – 1⁄2 cup
  • Black and green olives – 2-3 tbsp, sliced

For the Wonder lust Sauce:

  • Butter – 2 tsp
  • Flour – 2 tsp
  • Chicken stock – two and-a- half cups
  • Fresh cream – 1⁄4 cup
  • Salt and pepper to taste
  • Mixed herbs – 1/4 tsp
  • Cherry tomatoes – 4-6 nos., cut 1 x 2
  • Fresh herbs – 1-2 tsp
  • Celery – 2-3 tsp, sliced

Method

  1. Pre-prep all the ingredients for the chicken recipe as listed as per the components.
  2. Clean, wash and slit the chicken breasts, apply the marination in and out, keep aside for 30 minutes.
  3. In the meantime, heat butter and garlic, onion, add spinach and saute, add seasonings and herbs. Cook for 2 minutes and turn off flame. Add cheese and olives, stuff the chicken breasts, close the open ends, place them on a  greased baking/roasting tray and cook in a pre-heated oven at 170 degrees for 18-22 minutes. Cover with an aluminium foil for a few minutes and then open and cook.
  4. Finally prepare the sauce, heat butter and flour, cook for 10-15 seconds, add in the chicken stock. Mix well, add seasonings, bring to a boil, add in rest of the ingredients, blend in the fresh cream on a low flame and cook for 2 minutes. Now turn off the flame and add fresh herbs.
  5. Serve the chicken; plate up the cooked stuffed chicken breasts, add a little sauce to the plate, add freshly tossed beans/ potatoes/ assorted veggies and serve hot with rice/ garlic bread/ freshly baked bread rolls, etc.
