Champagne was a luxury, and is now lifestyle!

It takes many years and experienced hands to make a bottle of fine Champagne, and when we talk about the king of Champagnes, it is none other than Dom Pérignon. Dom has always taken pride in showcasing quality and finesse in their champagnes whether it is vintage or non vintage. And of course when it comes to Dom Perignon Plénitude, we are talking of quality at its peak. Time has also played a very crucial part in the success of this elixir. And especially Second Plénitude of Dom Pérignon, named P2, is the result of 17 years of elaboration. The wine evolves through successive stages that define different opportunities for expression that they call ‘plenitudes’.

While the world having enjoyed P1, the time has come to unveil the Second 2000 Vintage. Certified Sommelier Kriti Malhotra chats up with Vincent Chaperon, Chef de Cave, Dom Perignon, who says that Plénitude 2 is the second life of Dom Pérignon.

Q. Each Dom Perignon vintage is unique. Which is your favourite among them and why?
A. It is not easy to choose. Each Dom Pérignon vintage embodies Dom Pérignon harmony in a different way. But I must admit, Dom Pérignon Vintage 2008 has a special personal meaning for me — it was signed jointly by Richard Geoffroy and myself.

Q. From being an assistant wine maker to Richard Geoffroy to being appointed Chef de Cave, how has your journey been?

A. Since I began working alongside Richard Geoffroy in 2005, we have lived through thirteen harvests and declared four vintages. Through those years of intensive and close collaboration, we have nurtured continuous dialogue between our two approaches.

Although we have different training and backgrounds, Richard and I had a common desire to share the harmony of Dom Pérignon and we tried to create emotion through experiences. Beyond everything, it is the story of our human encounter: deep, meaningful, respectful.
