During summer or monsoon seasons, beer is one of my favourite drinks and it goes very well with food which I enjoy making in my kitchens. On a rainy day, beer is the perfect ingredient which fits into my favourite dish of Beer Poached Mussels with Sprouts Vegetable. It is glazed with barbeque chili sauce, served on a bed of sprouts and vegetables.

Here in this recipe I have used the beer for poaching the mussels and it was added once we were making the poaching liquid for the recipe.I used Medusa Beer which has right brew and elevates and accentuates the flavors of my dish. With the same beer I can enjoy it with my favorite recipe.

Chef’s Choice

Only recently, I won a competition where I received this beautiful mussel from quality NZ and since I do have beer at home and since it was raining I thought of experimenting with both the ingredients and created something which has depth in terms of flavor and yet remains healthy. So, I made some sprouts and vegetables alongside with it and I think it was a great dish for the day. Different beers pair well with different foods, so it’s important to learn the taste differences before you hit the kitchen.

Flavour Profile

Beer adds a rich, earthy flavor to the dish and it’s good for long poaching or stewing. Beers with a sweet and nutty taste also add flavors to the dish. Further, beer can be divided into two main groups: ales and lagers. Ale, the original beer, is brewed in a way that results in fruity, earthy flavors. Lagers make use of more modern brewing systems to be lighter and drier. Each type of beer has a distinctly different flavor that pairs well with certain foods. For instance, Mahou beer provides the right amount of tartness and acidity to this dish when paired with other ingredients like barbeque sauce, chili, garlic etc.

  • Medusa Beer 1 pint
  • Garlic Chops 30gm
  • Onion Chops 30gm
  • Zucchini Yellow Chop 15gm
  • Zucchini Green Chop 15gm
  • Yellow Capsicum 30gm
  • Green Capsicum 30gm
  • Red Capsicum 30gm
  • Tomatoes Chopped 50gm
  • Green Chili Chops 20gm
  • Sprouts 30gm
  • Salt To taste
  • Black Pepper 5gm
  • Soy Sauce 5ml
  • Barbeque Sauce 50ml
  • Chili Flakes 5gm
  • Habanero Sauce 5ml
  • Butter 30gm
  • Bhoot Jholokia Sauce 5gm
  • Refined Oil 10ml
  • Green Cardamom 2-3 pieces
  • Cinnamon Stick 1 no.
  • Lemon Juice 30ml
