Sabores, a 60-seater restaurant, has opened in Bambolim, near Siridao village in Goa, introducing a contemporary dining space rooted in the region’s Goan–Portuguese culinary heritage. Located within Clube de Palma, the restaurant draws on elements of traditional Goan-Portuguese architecture while presenting a modern, intimate setting.

The restaurant is helmed by Akshay Quenim, part of the family behind the landmark Mandovi’s Rio Rico, and founder of Goa-based dining destinations Tataki and Shoyu. Akshay, who is also associated with the National Restaurant Association of India (NRAI) Goa chapter, brings together his family’s hospitality legacy with formal training in hospitality management from Les Roches, Switzerland.

Sabores a 60-seater restaurant

Sabores’ menu reflects Goa’s diverse Hindu and Christian food traditions alongside Portuguese influences. Offerings include regional favourites and Portuguese-inspired dishes such as bacalhau, bulhão pato clams, prawn balchão, chicken cafreal, choriso pulao, traditional Goan curries, wood-fired seafood and classic Goan-Portuguese snacks like rissóis de camarão. The restaurant also features a dedicated bread programme with local staples such as poie, onde and pao.

The beverage menu has been developed in collaboration with Countertop India, focusing on cocktails inspired by local produce, seasonal ingredients and Goan flavour profiles.
