Sullivans Cove introduces Australia’s oldest single malt
Sullivans Cove Distillery has released a rare and landmark expression, the 24-Year-Old Apera Finish, Single Cask Nº HH0005, marking one of the oldest Australian single malts ever bottled and the first time the distillery has undertaken a finishing process of this kind.
Originally filled into a 300 litre American Oak cask in October 1999, the whisky matured for 17 years before being transferred in 2017 to a 225 lt American Oak ex-Apera cask for an extended seven-year finishing period. It was finally bottled in October 2024 at 51.1 percent ABV, determined through blind-tasting trials.
Describing the expression, Distillery Manager Heather Tillott emphasised the seamless integration of spirit and oak. “While this is a single cask finished in Apera, what has unfolded is not merely a finish; it’s a complete integration, where spirit and cask have truly married,” she said.
Only a limited number of HH0005 are available, and they can be purchased exclusively via ballot at sullivanscove.com, priced at AUD 2,500.
