Crowne Plaza Gr Noida celebrates Mughlai cuisine
Crowne Plaza Greater Noida has curated a special food festival, Kitchen of Mughals, at the hotel’s award-winning Indian fine dining restaurant, Spice Art, from May 17-31. Celebrating the grandeur and flavours of royal Mughal kitchens, the restaurant has been transformed into a majestic Durbar with rich décor, live Indian classical music, and a menu inspired by heirloom recipes and regal cooking techniques.
Conceptualised by Chef Vijay, the festival pays homage to the rich culinary traditions of Awadh and Delhi, reviving slow-cooked delicacies once reserved for emperors and nobles. “Kitchen of Mughals is a tribute to the culinary artistry of the Mughal era. Every dish tells a story — from the royal courts to the bylanes of Awadh and Delhi. We’ve revived age-old techniques and recipes that capture the indulgent soul of this cuisine,” said Chef Vijay.
Highlights from the festival menu include:
- Kakori Kebab – Soft, minced meat kebabs grilled with precision.
- Murgh Musallam – Whole chicken in a royal marinade, slow-cooked to perfection.
- Bohri Raan – Aromatic whole leg of lamb, spiced and roasted.
- Mahi Qaliya – Fish cooked in a turmeric-infused yogurt gravy.
- Badami Paneer Korma – Paneer in a rich almond-based curry.
- Muradabadi Gosht Biryani – Saffron-layered mutton biryani.
- Shahi Meetha – A luxurious dessert of saffron-soaked bread, dry fruits, and thickened milk.
