Globally acclaimed for her sustainable and innovative approach, Camila has crafted two exclusive menus for Syrah and Polo Lounge, seamlessly blending tradition, creativity, and environmental consciousness.
Syrah’s carefully curated cocktails highlight the art of storytelling through flavours. Inspired by the timeless tales of 1001 Nights, each cocktail tells a story, weaving together emotions, courage, and imagination. These innovative creations celebrate the rich culinary heritage of the Middle East while utilising advanced techniques such as lacto-fermentation and carbonation by fermentation.
Meanwhile, Polo Lounge’s redefined cocktails pay homage to history, tradition, and sustainability. Drawing inspiration from the spice route and cultural exchanges sparked by Portuguese explorers, the menu features conscious cocktails crafted to honour history and the planet. Ingredients are repurposed into inventive garnishes, jellies, and powders, showcasing Camila’s commitment to reducing waste and celebrating versatility.
