JW Marriott Mumbai Juhu has appointed Chef Roberto Apa as the Executive Chef at its newly launched modern European restaurant, Mezzo Mezzo. With a culinary career spanning over 15 years across Italy, France, China, Monte Carlo, Qatar, and now India, Chef Roberto brings global finesse and a deep-rooted passion for authentic Italian cuisine.

A native of Naples in Italy, Chef Roberto began his culinary journey in his grandmother’s kitchen and later honed his craft at ALMA – The School of Italian Culinary Arts. He has worked at several Michelin-starred restaurants and trained under acclaimed chefs such as Peppe Aversa and Marco Bistarelli, who were protégés of Maestro Gualtiero Marchesi, a pioneer of modern Italian cuisine.

At Mezzo Mezzo, Chef Roberto will curate a menu that balances traditional techniques with contemporary flair, using locally sourced ingredients to deliver refined and memorable dining experiences. He aims to create a space that evolves with the rhythm of the city—from light bites during sundowners to robust flavours for evening indulgence.

Speaking about his new role, Chef Roberto said, “Innovation in the kitchen is about balancing tradition with fresh ideas. Mumbai’s energy inspires me to blend local influences with modern European techniques, making each meal both familiar and unexpected.”
