Jaipur is set to welcome Primitive, an immersive dining experience from the creators of Native Cocktail Room, where ancestral Indian cooking techniques take centre stage. Nestled in the captivating Hotel Pearl Palace, Primitive reimagines open-fire cooking, filling the air with the rich aromas of smoldering wood, caramelised spices and slow-roasted meats. The menu embraces simplicity, with dishes like smoked sukkas, rustic bakarkhani and slow-cooked curries that highlight the depth of traditional flavours.

PRIMITIVE JAIPUR minusTrue to its name—‘Pracheen’ in Hindi— Primitive forgoes gas entirely, relying solely on wood and coal to create bold, soulful flavours. Signature offerings include Junglee Chicken, inspired by rustic hunting traditions, Murg ke Pakode, a refined take on a classic, and Bombay Aloo Biryani, paying tribute to Mumbai’s street flavours.

The experience extends to the bar, where cocktails like More Than Gold, Red Lady, Panchgani and Golden Apple celebrate India’s indigenous ingredients, blending age-old techniques with contemporary artistry.

 

PRIMITIVE JAIPURThe interiors blend heritage craftsmanship with modern grandeur, featuring hand-painted murals inspired by the Ajanta Ellora caves, traditional mirror work and golden champagne hues, creating an atmosphere of warmth and nostalgia.

Primitive is the vision of Simran Kaur and Karan, who sought to introduce Jaipur to an experiential dining space rooted in open-fire techniques admired in global culinary hotspots like London and Japan. With Chef Mohib leading the culinary direction, Primitive offers a dining experience that is both luxurious and deeply personal. As it opens its doors, Jaipur is set to witness a gastronomic journey like no other.
