The St. Regis Mumbai has appointed Peruvian Masterchef Willman Lan Thorne as Chef de Cuisine and Chef Jesús Caballero as Sous Chef at Koishii, its acclaimed Nikkei dining destination. With a combined experience of over three decades, the duo brings expertise, passion, and innovation to Mumbai’s dining scene.

Willman Lan Thorne and Jesús CaballeroChef Lan, with 19 years of experience across Lima, Dubai, Cairo, and Panama, has mastered the fusion of Japanese, Nikkei, Peruvian and Latin cuisines at renowned establishments like Osaka and Blue Marlin Ibiza. Meanwhile, Chef Caballero, with 16 years of global experience, has worked at top-tier restaurants in Chile, Dubai, Lebanon and Peru, excelling in sushi, menu innovation and staff training.

Their arrival marks a new chapter for Koishii, enhancing its Nikkei identity while incorporating broader Latin American flavours blended with Japanese ingredients and techniques.
